  • 3 tablespoons (45 ml) Extra Virgin Olive Oil
  • 1 tablespoon (15 ml) Balsamic Vinegar (aged at least 3 years)
  • 1 teaspoon (5 grams) Honey (or maple syrup for vegan option)
  • 1/2 teaspoon (2 grams) Dijon Mustard
  • Salt and freshly cracked Black Pepper (to taste)
  • Optional: Shaved Parmesan cheese, toasted walnuts, or sliced strawberries

Instructions

  1. In a small bowl, combine the extra virgin olive oil, balsamic vinegar, honey, and Dijon mustard. Whisk vigorously for about 30 seconds until the mixture is emulsified and slightly thickened. Taste and adjust seasoning with salt and pepper. Set aside.
  2. If washing the greens yourself, submerge the spring mix in cold water, swish gently to remove dirt, and lift out. Repeat until water is clear. Use a salad spinner or paper towels to dry the greens thoroughly. Ensure greens are completely dry to prevent diluting the dressing.
  3. If using optional toppings like nuts, toast them in a dry pan for 2-3 minutes until fragrant and let cool. Shave cheese or slice fruits as desired.
  4. Place the dried spring mix in a large serving bowl. Drizzle about half of the dressing over the greens. Using your hands or two large spoons, gently toss the salad to coat every leaf evenly without bruising them. Add more dressing as needed.
  5. Arrange the salad on individual plates or a large platter. Top with prepared nuts, cheese, and fruits. Drizzle a little more dressing over the top for visual appeal. Serve immediately.
