A quick, high-protein meal featuring crispy cornstarch-coated chicken breast tossed in a creamy, spicy, and sweet Bang Bang sauce, served over rice with fresh vegetables.

- 2 large boneless, skinless chicken breasts
- 2–3 tablespoons cornstarch
- Salt, black pepper, and garlic powder for seasoning
- 1 tablespoon oil (for cooking)
- 1/3 cup mayonnaise
- 2 tablespoons Sriracha hot sauce
- 2 tablespoons sweet chili sauce
- 1 tablespoon fresh lime juice
- White rice or cauliflower rice (for base)
- Shredded carrots
- Cucumber, sliced
- Green onions, chopped
Instructions
- Trim excess fat from chicken breasts and cut into 1-inch cubes. Place in a large mixing bowl.
- Season chicken generously with salt, pepper, and garlic powder. Toss to coat evenly.
- Sprinkle cornstarch over the seasoned chicken and toss until lightly dusted. Let sit for 5 minutes.
- In a small bowl, whisk together mayonnaise, Sriracha, sweet chili sauce, and lime juice until smooth. Adjust spice/sweetness to taste.
- Heat oil in a large skillet over medium-high heat. Add chicken in a single layer (do not overcrowd).
- Cook chicken for 3-4 minutes per side until golden brown and crispy, reaching an internal temperature of 165°F (74°C). Remove and drain on paper towels.
- While chicken cooks, prepare vegetables: shred carrots, slice cucumber, and chop green onions.
- Assemble bowls with a base of warm rice or cauliflower rice. Top with crispy chicken, carrots, and cucumber.
- Drizzle generously with Bang Bang sauce and garnish with green onions. Serve immediately.
Notes
Do not skip the cornstarch step as it creates the necessary crunch. Keep heat at medium-high to avoid greasy chicken. For meal prep, store sauce and chicken separately to maintain texture. The sauce can be made up to a week in advance.
