Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Wash peaches and slice into ½-inch chunks (about 6 cups). Peel if desired.
  3. In a large bowl, combine peach chunks, blueberries, sugar, cornstarch, lemon juice, cinnamon, and vanilla. Toss to coat evenly.
  4. Pour the fruit mixture into the prepared baking dish and spread evenly.
  5. In a separate medium bowl, whisk together flour, brown sugar, and salt.
  6. Add cold cubed butter to the dry ingredients and use a pastry cutter or fingers to mix until the mixture resembles coarse crumbs with pea-sized butter chunks.
  7. Stir in oats and pecans (if using).
  8. Sprinkle the topping evenly over the fruit filling without pressing down.
  9. Bake for 45-50 minutes until the topping is golden brown and the fruit filling is bubbling vigorously.
