- 3 cups shredded or chopped rotisserie chicken (skinless)
- 1/2 cup high-quality mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 2 stalks celery, finely diced
- 1/4 cup red onion, finely minced
- 1/4 cup chopped dill pickles
- 2 tablespoons fresh dill, chopped
- Salt and freshly cracked black pepper to taste
Instructions
- Remove meat from rotisserie chicken, discarding skin and bones. Chop into bite-sized pieces and place in a large mixing bowl.
- Finely dice the celery and red onion. If the onion is too strong, rinse under cold water and pat dry.
- Chop the dill pickles into small bits.
- In a separate small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
- Pour the dressing over the chicken and vegetables. Add fresh dill.
- Gently fold everything together until evenly coated, being careful not to mash the chicken.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Give a final stir before serving. Adjust seasoning or consistency with water/lemon juice or more chicken/celery if needed.
Notes
Ensure chicken is completely cool before mixing to prevent the dressing from breaking. For a lower-fat version, substitute half the mayo with mashed avocado or Greek yogurt. Do not freeze this salad as the texture will suffer. Best served cold or at room temperature.
