Description

  • 1 lb boneless, skinless chicken thighs, cut into 1-inch chunks
  • 2 tablespoons cornstarch
  • 1/2 cup dark brown sugar
  • 1/2 cup low-sodium soy sauce
  • 1 tablespoon fresh ginger, grated
  • 3 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 bunch green onions (scallions), chopped (white and green parts separated)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon toasted sesame oil
  • Cooking oil for searing

Instructions

  1. Pat chicken thighs dry with paper towels and cut into bite-sized pieces. Place in a bowl and toss with cornstarch until lightly coated.
  2. In a small bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, and red pepper flakes until sugar is mostly dissolved.
  3. Heat oil in a large wok or skillet over medium-high heat. Sear chicken in a single layer for 3-4 minutes per side until golden brown and cooked through. Remove chicken to a plate.
  4. In the same pan, add a little more oil if needed. Stir-fry broccoli and white parts of green onions for 2 minutes until tender-crisp.
  5. Return chicken to the pan and pour the sauce mixture over everything. Toss to coat and simmer for 1-2 minutes until the sauce thickens and becomes glossy.
  6. Remove from heat, drizzle with sesame oil, and toss. Serve immediately over steamed rice, garnished with green parts of scallions.

Notes

Ensure chicken is completely dry before coating in cornstarch to ensure proper searing. Do not crowd the pan when searing chicken to avoid steaming. Use a meat thermometer to ensure chicken reaches 165°F (74°C). For a gluten-free version, substitute soy sauce with tamari.
