Description
A quick and easy 30-minute dinner featuring wild-caught salmon fillets roasted with a sticky, amber glaze made from bourbon, brown sugar, and fresh peach wedges.

- 2 large ripe peaches, sliced into wedges
- 2 salmon fillets (approx. 6 ounces each)
- 2 tablespoons bourbon
- 2 tablespoons brown sugar
- 1 tablespoon soy sauce
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon vegetable oil
- Salt and black pepper to taste
- Green onions, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Wash peaches, remove pits, and slice into 1/4 inch thick wedges. Place on one side of the baking sheet.
- In a small mixing bowl, whisk together brown sugar, bourbon, soy sauce, minced garlic, and grated ginger until sugar is mostly dissolved.
- Pat salmon fillets dry with paper towels. Season tops lightly with salt and pepper.
- Place salmon fillets on the baking sheet next to the peaches. Brush the tops of the salmon generously with half of the glaze.
- Roast in the preheated oven for 12-15 minutes, or until salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- If peaches are not soft enough after 10 minutes, toss them in the remaining glaze.
- Remove from oven and brush the remaining glaze over the fish and peaches. Let rest for 2 minutes before serving.
Notes
Pat the salmon dry before cooking to ensure the glaze sticks and the fish roasts rather than steams. If using frozen peaches, thaw and drain them very well to prevent a watery glaze. For a gluten-free version, substitute soy sauce with tamari. Do not freeze leftovers as the peach texture becomes mushy upon thawing.
