Ingredients

  • 2 slices Sourdough or Whole Wheat Bread
  • 1/2 cup Shredded Cheddar Cheese
  • 1/2 large Ripe Avocado
  • 1 cup Cooked Chicken (shredded or diced)
  • 2 tablespoons Butter
  • Salt and Pepper to taste
  • Optional: Red Pepper Flakes or Hot Sauce

Instructions

  1. Prepare the chicken by shredding it and warming it in the microwave for 30 seconds if cold. Season lightly with salt and pepper.
  2. Slice the avocado, remove the pit, and scoop out the flesh. Mash lightly with a fork, leaving some chunks, and season with salt and lime juice if using.
  3. Assemble the sandwich: Spread mashed avocado on one slice of bread. Pile warm chicken and half the cheese on the other slice. Place the avocado slice on top of the chicken, then top with the second slice of bread, cheese-side down.
  4. Butter the outside of both slices of bread evenly.
  5. Heat a non-stick skillet over medium-low heat and add a little butter or oil.
  6. Place the sandwich in the pan and press down gently. Cook for 3-4 minutes until the bottom is golden brown and crispy.
  7. Flip the sandwich carefully, press down again, and cook for another 3-4 minutes until the cheese is fully melted. Cover with a lid for a minute if needed to help melting.
  8. Remove from pan and let rest for 1-2 minutes before slicing diagonally and serving immediately.

Notes

Use medium-low heat to prevent burning the bread before the cheese melts. Let the sandwich rest for 1-2 minutes after cooking to allow the cheese to set. For a dairy-free version, skip the cheese and use extra avocado or hummus. For a gluten-free version, use sturdy gluten-free bread.
