- 1 pound (450g) refrigerated sugar cookie dough
- 8 ounces (225g) full-fat cream cheese, softened
- 1/2 cup (120ml) heavy cream
- 1/4 cup (30g) powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, hulled and sliced
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1 tablespoon honey or agave nectar (optional)
- 2 tablespoons white chocolate chips, melted (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 12-inch pizza pan or round cake pan with parchment paper or grease lightly.
- Press or roll the sugar cookie dough into the pan to fit, about 1/4-inch thick. Press edges up slightly to form a rim.
- Bake the crust for 10-12 minutes until edges are lightly golden. Remove and let cool completely on a wire rack (chill in fridge for 20 minutes if needed).
- While crust cools, beat softened cream cheese, powdered sugar, vanilla, and heavy cream together until smooth and fluffy.
- Spread the cream cheese filling evenly over the completely cooled crust.
- Arrange sliced strawberries, blueberries, and raspberries on top of the filling.
- Refrigerate for at least 1 hour until the filling is set.
- Drizzle with melted white chocolate if desired, slice into wedges, and serve chilled.
Notes
Ensure the crust is completely cool before adding the filling to prevent sogginess. Pat berries dry to avoid excess moisture. For best results, use full-fat cream cheese. Can be made ahead and stored in the fridge for up to 3 days.
