A quick, comforting, and budget-friendly creamy salmon pasta that comes together in under 20 minutes using simple pantry staples.


Ingredients

  • 8 oz Spaghetti or Fettuccine
  • 2 large or 4 small Salmon Fillets
  • 1 cup Heavy Cream or Half-and-Half
  • 3 cloves Garlic, minced
  • 2 tablespoons Unsalted Butter
  • 1 tablespoon Dried Parsley or Fresh Chives
  • Salt and Black Pepper to taste

Instructions

  1. Boil a large pot of salted water. Add pasta and cook until 1 minute before al dente. Reserve half a cup of starchy pasta water, then drain pasta and set aside.
  2. Pat salmon fillets dry and season with salt and pepper. Heat half the butter in a large skillet over medium-high heat. Sear salmon for 4-5 minutes without moving, flip, and cook for another 2-3 minutes until flaky. Remove and set aside.
  3. Reduce skillet heat to medium. Add remaining butter. Once melted, add minced garlic and sauté for 30 seconds until fragrant. Pour in heavy cream and simmer for 2-3 minutes until slightly thickened.
  4. Break cooked salmon into large flakes and add to the sauce. Stir gently to coat. Add drained pasta to the skillet and toss to combine, adding reserved pasta water if needed to bind the sauce.
  5. Taste and adjust seasoning with salt and pepper. Sprinkle with parsley or chives and serve immediately.

Notes

Do not overcook the salmon as it continues to cook after removal from heat. Use starchy pasta water to help the sauce cling to the noodles. For a lighter version, swap heavy cream for Greek yogurt added at the end off the heat. To prevent cream separation, keep heat low when adding cream.
