- 2 medium sweet potatoes, peeled and diced into ½-inch cubes
- 1 lb ground beef (80/20 blend)
- 1 medium yellow or white onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil (for potatoes)
- 1 teaspoon oil (for beef)
- 1/2 cup mayonnaise (Duke’s or Hellmann’s)
- 2 tablespoons soy sauce (low-sodium)
- 1 tablespoon rice vinegar
- 1–2 tablespoons sriracha or chili flakes
- 1 tablespoon honey
- Salt and pepper to taste
- 2 cups cooked rice or quinoa
- 2 green onions, sliced thinly
- 1 tablespoon toasted sesame seeds
- 1/4 cup fresh cilantro, chopped
Instructions
- Preheat oven to 400°F (200°C). Toss diced sweet potatoes with 1 tablespoon olive oil, salt, and pepper. Spread on a parchment-lined baking sheet and roast for 15-20 minutes until tender and caramelized.
- While potatoes roast, whisk together mayonnaise, soy sauce, rice vinegar, sriracha, and honey in a small bowl. Adjust seasoning to taste and set aside.
- Heat a large skillet over medium-high heat. Add ground beef and cook for 5-7 minutes, breaking it up with a spoon, until browned and cooked through. Drain excess fat if necessary.
- Push beef to one side of the pan. Add chopped onion to the empty space and cook for 1 minute until softened. Add minced garlic and cook for 30 seconds until fragrant.
- Mix beef and onions together. Pour the creamy sauce over the mixture and stir to coat. Simmer for 1-2 minutes until the sauce thickens slightly.
- Place cooked rice or quinoa in the bottom of bowls. Top with the creamy beef mixture and roasted sweet potatoes.
- Garnish with sliced green onions, sesame seeds, and fresh cilantro. Serve immediately.
Notes
For a faster prep, microwave diced sweet potatoes for 3-4 minutes before roasting. The sauce can be made ahead and stored in the fridge. If using canned sweet potatoes, drain and pat dry thoroughly, though fresh is recommended for best texture.
