Ingredients

Instructions
- Wash the potatoes thoroughly under cold water. Pat them completely dry with a clean kitchen towel to remove all moisture.
- Cut the potatoes into uniform 1-inch cubes. If using larger potatoes, slice in half, then quarters, then cubes to ensure even sizing.
- Optional: Soak the cut potatoes in cold water for 15-20 minutes to draw out excess starch. Drain and pat dry again thoroughly.
- Place the dried potato cubes in a large mixing bowl. Drizzle with olive oil and sprinkle with garlic powder, onion powder, dried rosemary, salt, and pepper.
- Toss the potatoes until every piece is evenly coated with oil and seasoning.
- Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
- Arrange the potatoes in the air fryer basket in a single layer, ensuring they are not overcrowded to allow for proper air circulation. Cook in batches if necessary.
- Cook at 400°F (200°C) for 15-18 minutes. Shake the basket or stir the potatoes halfway through (around the 8-minute mark) to ensure even browning.
- Check for doneness by piercing a piece with a fork; it should slide in easily.
- Transfer to a serving bowl, let rest for 2-3 minutes, and garnish with fresh chopped parsley before serving immediately.

Ensure potatoes are completely dry before seasoning to maximize crispiness. Do not overcrowd the air fryer basket, as this traps steam and leads to soggy results.
