- 1 medium ripe avocado
- 1–2 tablespoons extra virgin olive oil
- 1 teaspoon lemon juice
- Sea salt to taste
- Black pepper to taste
- Red pepper flakes (optional)
- Feta or goat cheese, crumbled (optional, 1 tablespoon)
Instructions
- Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
- Add lemon juice, a pinch of salt, and black pepper to the avocado.
- Mash the avocado with a fork until creamy but still chunky; taste and adjust seasoning.
- Place a skillet over medium heat and add olive oil, warming until it shimmers but does not smoke.
- Place bread slices in the pan and cook for about 2 minutes on one side until golden brown and crispy.
- Flip the bread and cook the other side for another 1-2 minutes until firm.
- Remove bread from heat and immediately spread the mashed avocado mixture over the hot bread.
- Sprinkle with red pepper flakes and extra salt if desired.
- Cut into quarters and serve immediately while the bread is still crispy.
Notes
Use sturdy bread like sourdough to prevent sogginess. Let avocado sit out for 10 minutes before mashing for better texture. Do not overcrowd the pan. Store mashed avocado with plastic wrap pressed directly on the surface to prevent browning. Avoid microwaving the toast as it makes the bread soggy.
