Description
Achieve restaurant-quality, shatteringly crisp chicken wings without deep-frying using a simple baking powder trick. This oven-baked method ensures juicy meat and crunchy skin while being healthier and easier to clean up.
Ingredients
- 2 to 3 pounds chicken wings (whole wings or drumettes)
- 1 tablespoon aluminum-free baking powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper, freshly cracked
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon cayenne pepper (optional)
- 1 teaspoon smoked paprika (optional)
Instructions
- Preheat the oven to 425°F (220°C).
- Separate whole wings at the joints and discard tips or save for stock.
- Pat the wings thoroughly dry with paper towels to remove all moisture.
- In a large bowl, combine baking powder, salt, pepper, and dry rub spices.
- Add the dried wings to the bowl and toss until evenly coated with a thin layer of seasoning.
- Line a rimmed baking sheet with aluminum foil and place a wire rack on top.
- Arrange the wings on the rack in a single layer, ensuring they do not touch.
- Bake for 40 to 50 minutes, flipping the wings halfway through to ensure even browning.
- Check that the internal temperature reaches 165°F (74°C) and the skin is golden brown and crisp.
- Optional: Broil for 1-2 minutes at the end for extra crispness, watching closely to prevent burning.
- Serve immediately, tossing with sauce if desired, or with dipping sauces on the side.
Notes
For extra crispiness, let the seasoned wings sit on the rack in the fridge for 1-2 hours before baking. Ensure wings are bone-dry before seasoning. Do not crowd the pan; bake in batches if necessary. If saucing, toss wings in sauce immediately before serving to maintain crispness. Reheat leftovers in the oven or air fryer, not the microwave.
