A budget-friendly, low-carb comfort food dish that uses ground beef, shredded cabbage, and cheese baked together for a crispy, burger-like experience without the bun.

- 1/2 medium head green cabbage, finely shredded
- 1 pound 80/20 ground beef
- 1 small yellow onion, diced finely
- 1 cup shredded cheddar cheese (from a block)
- 1 large egg
- 1 tablespoon yellow or Dijon mustard
- 2 tablespoons sugar-free ketchup
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 teaspoon oil or butter (for sautéing)
Instructions
- Preheat oven to 400°F (200°C). Rinse and pat dry the cabbage.
- Remove the core from the cabbage and shred it into thin, bite-sized strips.
- In a large skillet over medium heat, sauté the diced onion in oil or butter until translucent (3-4 minutes).
- Add the ground beef to the skillet, breaking it up as it cooks. Cook until browned and no pink remains. Season with salt, pepper, and garlic powder. Drain excess fat if desired.
- In a large mixing bowl, combine the shredded cabbage, cooked beef, and sautéed onions.
- Add the egg, mustard, ketchup, and a pinch of salt and pepper to the bowl. Toss until the cabbage is evenly coated.
- Spread the mixture evenly into a greased 9×13 inch baking dish, pressing down firmly.
- Sprinkle the shredded cheddar cheese evenly over the top.
- Bake for 20-25 minutes until the cheese is melted, bubbly, and browned, and the cabbage is tender-crisp.
- Remove from oven and let rest for 5 minutes before serving.
Notes
Hand-shredding the cabbage provides better texture than using a food processor. If using lean beef (93/7 or higher), add a tablespoon of oil to the baking dish to prevent dryness. Let the dish rest for 5 minutes after baking to allow the egg to set for easier serving. Can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
