Description

Ingredients

  • Boneless, skinless chicken thighs
  • Short-grain or medium-grain white rice (or Jasmine rice)
  • Cornstarch
  • Soy sauce (or tamari for gluten-free)
  • Garlic (fresh minced)
  • Ginger (fresh grated)
  • Sesame oil
  • Rice vinegar or apple cider vinegar
  • Sugar
  • Shredded carrots
  • Cucumber ribbons
  • Green onions
  • Salt
  • White pepper
  • Garlic powder
  • Ginger powder
  • Chili flakes (optional)
  • Sesame seeds (optional)
  • Cooking oil (for frying)

Instructions

  1. Rinse rice under cold water until clear. Cook using a 1:1.5 rice-to-water ratio: bring to boil, reduce heat to low, cover, and simmer for 15-18 minutes. Let sit covered for 10 minutes, then fluff with a fork.
  2. Cut chicken thighs into 1-inch cubes and pat dry. Marinate in 1 tbsp soy sauce, 1 tsp cornstarch, and a pinch of salt for 15 minutes.
  3. Mix 1/2 cup cornstarch with 1 tsp garlic powder, 1 tsp ginger powder, and a pinch of white pepper in a shallow dish. Coat the marinated chicken pieces evenly and shake off excess.
  4. Heat about 1 inch of oil in a skillet to 350°F (175°C). Fry chicken in batches for 3-4 minutes per side until golden brown and cooked through. Drain on a wire rack.
  5. Whisk together 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp sesame oil, 1 tsp sugar, and 1 clove minced garlic until sugar dissolves.
  6. Assemble bowls by dividing rice among containers. Top with crispy chicken, shredded carrots, cucumber ribbons, and green onions. Drizzle with sauce and garnish with sesame seeds and chili flakes.

Notes

For extra crunch, use a double-fry method. Store chicken and sauce separately to maintain crispiness. The recipe can be made gluten-free by using tamari. For low-carb, substitute rice with cauliflower rice.
