Crispy Rosemary Dijon Chicken

Description

A budget-friendly, weeknight dinner featuring bone-in, skin-on chicken thighs coated in a tangy Dijon mustard and rosemary dry rub, baked until crispy and golden.

Ingredients

Scale
  • 2 to 3 pounds bone-in, skin-on chicken thighs
  • 1/2 cup Dijon mustard (smooth, classic style)
  • 2 tablespoons dried rosemary
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika (smoked or regular)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 tablespoon olive oil or vegetable oil

Instructions

  1. Preheat oven to 425°F (220°C) and let it fully preheat for at least 15 minutes.
  2. Pat chicken thighs completely dry with paper towels to ensure crispiness.
  3. In a small bowl, combine dried rosemary, garlic powder, onion powder, paprika, salt, and black pepper to create the dry rub.
  4. Place chicken thighs on a wire rack set over a baking sheet. Brush a thin, even layer of Dijon mustard over the top skin side of each thigh.
  5. Sprinkle the dry spice mixture generously over the mustard-coated chicken, pressing gently to help it stick.
  6. Drizzle or brush a tiny amount of olive oil over the seasoned chicken.
  7. Bake for 35 to 40 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is deep golden brown and crispy.
  8. Optional: Switch to broil for 1-2 minutes at the end for extra crispiness, watching closely to prevent burning.
  9. Remove from oven and let rest for 5 minutes before serving.

Notes

Patting the chicken dry is crucial for crispiness. Use a wire rack to allow air circulation and prevent soggy bottoms. If using chicken breasts, reduce cooking time by 10 minutes. For air fryer instructions, cook at 400°F for 20-25 minutes, shaking halfway through. Leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months.
