Description

  • 23 pound boneless pork loin roast
  • 2 large yellow onions, chopped into wedges
  • 2 pounds red potatoes or Yukon Golds, cut into quarter-sized chunks
  • 4 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 1 tablespoon butter
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (for gravy)

Instructions

  1. Wash and chop potatoes into chunks. Peel and chop onions into wedges. Mince garlic. Place all vegetables at the bottom of the slow cooker insert.
  2. Pat the pork loin dry. Mix rosemary, thyme, paprika, salt, and pepper in a small bowl. Rub the spice mixture evenly over the entire pork loin.
  3. Heat olive oil in a large skillet over medium-high heat. Sear the pork loin for 2-3 minutes on each side until browned. Transfer the seared pork on top of the vegetables in the slow cooker.
  4. Pour chicken broth over the pork and vegetables. Scrape any browned bits from the skillet into the pot. Cover with the lid.
  5. Cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the pork reaches an internal temperature of 145°F and potatoes are tender.
  6. Remove pork from the pot, tent with foil, and let rest for 10 minutes.
  7. Pour cooking liquid into a saucepan. Whisk in the cornstarch slurry and simmer for 2 minutes until thickened. Stir in butter. Serve gravy over sliced pork and potatoes.

Notes

Lean pork loin can dry out if overcooked; use a meat thermometer to ensure it reaches 145°F. Resting the meat is crucial for juiciness. Avoid lifting the lid frequently during cooking. For a dairy-free option, skip the butter in the gravy.
