Description

  • 1 cup dill pickles, finely chopped
  • 1/4 cup red onion, finely diced
  • 2 tablespoons ranch seasoning mix
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 810 small flour or corn tortillas
  • 1 cup cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno, sliced (optional)

Instructions

  1. Place shredded chicken in a large bowl and toss with ranch seasoning mix and garlic powder until evenly coated.
  2. Heat butter in a large skillet over medium heat. Add red onion and cook for 2 minutes until softened.
  3. Add chopped dill pickles to the skillet and cook for 1 minute to release aroma.
  4. Add the seasoned chicken to the skillet with the pickles and onions. Stir and cook for 3-4 minutes until heated through and flavors are combined.
  5. Warm tortillas in a microwave (wrapped in a damp paper towel) or in a dry skillet for 30 seconds per side.
  6. Assemble tacos by spooning the chicken mixture onto tortillas, topping with shredded cheddar cheese, and adding a dollop of sour cream.
  7. Garnish with fresh cilantro and sliced jalapenos. Serve immediately.
