Description

  • 2 tablespoons strawberry syrup
  • 1 cup cold club soda or sparkling water
  • Ice cubes (optional, if strawberries aren’t frozen solid)
  • Lime wedges (for garnish and squeezing)
  • Sugar (optional, for rimming glasses)

Instructions

  1. Break apart frozen strawberries if they are in large clumps to help the blender process them evenly.
  2. Place the frozen strawberries and strawberry syrup into a blender jar. Add ice cubes if your blender is not powerful enough to crush the frozen fruit alone.
  3. Secure the lid and blend on low speed, gradually increasing to high. Blend for 30-45 seconds until a thick, slushy consistency is achieved. The mixture should resemble a thick milkshake.
  4. While blending, prepare serving glasses by optionally rimming them with sugar using lime juice or water.
  5. Pour the blended strawberry slush into the prepared glasses, scraping out all contents from the blender.
  6. Slowly pour the cold club soda over the slush to create layers or mix it in, depending on preference.
  7. Gently stir the drink with a long spoon to combine the slush and soda.
  8. Garnish with a fresh strawberry slice and a lime wedge. Squeeze the lime wedge over the top to release oils.
  9. Serve immediately while cold and fizzy.

Notes

For the best texture, use small-curd frozen berries. If using fresh strawberries, freeze them solid for at least four hours beforehand. The slush mixture should taste very sweet before adding soda, as the carbonation will dilute the flavor. Keep club soda cold until serving to prevent it from going flat. Leftover slush can be stored in the freezer for up to three days; let it soften slightly before re-blending. Do not store the mixed drink with soda in the fridge as it will lose carbonation.
