A quick, budget-friendly beef stir fry that uses simple ingredients and a velveting technique to create tender meat and crisp vegetables in under 30 minutes.

- 1 pound flank steak or sirloin, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon sesame oil
- 1/4 teaspoon baking soda
- 2 medium bell peppers, sliced into strips
- 1 cup broccoli florets
- 1 large carrot, julienned or thinly sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 2 tablespoons oyster sauce
- 1 tablespoon brown sugar
- 2 tablespoons water
- 1 teaspoon rice vinegar
- Cooking oil for wok/skillet
Instructions
- Slice the beef against the grain into thin strips. In a bowl, mix with soy sauce, cornstarch, sesame oil, and baking soda. Let sit for 15 minutes to velvety.
- In a small bowl, whisk together oyster sauce, brown sugar, water, rice vinegar, and a pinch of black pepper. Set aside.
- Wash and chop vegetables into uniform sizes. Mince garlic and grate ginger.
- Heat a wok or large skillet over high heat. Add oil and once shimmering, add beef in a single layer. Cook 1-2 minutes per side until browned but not fully cooked. Remove to a plate.
- Add more oil if needed. Add carrots and broccoli, stir-frying for 2 minutes. Add onions and bell peppers, cooking for another 2 minutes until crisp-tender.
- Add garlic and ginger to the pan in the last 30 seconds.
- Return beef to the pan. Pour sauce over everything and toss vigorously. Cook for 1 more minute until sauce thickens and coats ingredients.
- Serve immediately over rice or noodles.
Notes
Slice beef against the grain for tenderness. Do not overcrowd the pan when cooking beef to ensure proper searing. The sauce should coat the back of a spoon; add water if too thick or cook longer if too thin. Leftovers store well in the fridge for up to 3 days.
