Ingredients
- 1 cup uncooked long-grain white rice (pre-cooked or parboiled)
- 1 (10.5 oz) can cream of mushroom soup
- 2 cups shredded or diced cooked chicken (rotisserie or breast/thigh)
- 1 (12 oz) bag frozen broccoli florets (thawed and drained) or fresh steamed broccoli
- 1/2 cup milk (whole, skim, or almond)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese (optional, for topping)
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with non-stick spray or oil.
- Prepare the rice: If using uncooked rice, boil until about 75% cooked or al dente, then rinse with cold water. If using pre-cooked or leftover rice, ensure it is ready to mix.
- In a large mixing bowl, combine the cooked rice, shredded chicken, and drained broccoli. Ensure frozen broccoli is thawed and excess water is squeezed out.
- Add the can of cream soup and milk to the bowl.
- Sprinkle in garlic powder, onion powder, salt, and black pepper. Mix thoroughly until all ingredients are evenly coated in the sauce.
- Pour the mixture into the prepared baking dish and spread evenly. If using cheese, sprinkle it over the top.
- Bake for 25-30 minutes, or until the edges are bubbling and the top is slightly golden. For a cheesy crust, broil for the last 2 minutes, watching closely to prevent burning.
- Remove from oven and let rest for 5-10 minutes before serving to allow the sauce to thicken and rice to absorb remaining liquid.
