Ingredients
- 3 large ripe bananas (blackened/spotted)

Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
- In a large bowl, mash the ripe bananas with a fork until smooth (about 1 ½ cups).
- Add the softened butter, sugar, eggs, and vanilla extract to the bananas. Mix until well combined and smooth.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients. Fold gently with a spatula until just combined. Do not overmix.
- If using, fold in the chopped walnuts.
- Pour batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- In a medium bowl, beat the softened cream cheese and butter until smooth.
- Add powdered sugar, vanilla, and a pinch of salt. Beat until creamy and smooth.
- Spread the frosting over the completely cooled cake and serve.
