Description
A refreshing, budget-friendly drink made with fresh pineapple, cucumber, and lime. This simple recipe uses minimal ingredients to create a bright, hydrating beverage perfect for hot days.
Ingredients
Scale
- 1 medium pineapple, peeled and chopped
- 1 large English cucumber, chopped (or peeled if using standard cucumber)
- 2 limes, juiced
- 4 cups cold water
- 1–2 tablespoons honey or agave (optional, depending on pineapple sweetness)
- Ice cubes for blending or serving
Instructions
- Prep the ingredients by peeling the pineapple, removing eyes, and cutting into chunks. Wash and chop the cucumber into large chunks.
- Add pineapple chunks, cucumber chunks, and lime juice to a blender. Pour in 2 cups of water.
- Blend on high speed for 1-2 minutes until the mixture is completely smooth.
- Taste the mixture and adjust sweetness with honey or agave if needed, or add more water/lime to balance flavor.
- Strain the blended mixture through a fine-mesh strainer into a pitcher, pressing the pulp to extract all liquid. Discard pulp.
- Add the remaining 2 cups of cold water to the strained liquid and stir well.
- Serve immediately over ice, garnished with pineapple slices or cucumber ribbons if desired.
Notes
Use cold ingredients for a colder drink without diluting flavor. Blend lime juice last to maintain bright flavor and smooth texture. Drink within 24 hours for best freshness. Can be made ahead but add fresh lime juice before serving. Leftover pulp can be used in smoothies or baking.
