Description

A comforting, quick, and easy vegetarian soup that captures the flavors of traditional lasagna without the baking stress. It features tender pasta, rich tomato sauce, and creamy ricotta cheese in a single pot.


Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion, finely diced
  • 45 cloves garlic, minced
  • 2 medium carrots, peeled and diced small
  • 2 celery stalks, diced
  • 1 (28-ounce) can crushed tomatoes (San Marzano recommended)
  • 2 tablespoons tomato paste
  • 4 cups vegetable broth (low-sodium)
  • 810 lasagna noodles, broken into pieces
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup full-fat ricotta cheese
  • 1/2 cup grated parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery with a pinch of salt. Sauté for 5-7 minutes until soft and translucent.
  2. Add minced garlic and tomato paste. Stir constantly for 1 minute until fragrant, being careful not to burn the garlic.
  3. Pour in crushed tomatoes and vegetable broth. Stir to combine, scraping up browned bits from the bottom. Add dried basil, oregano, salt, and pepper. Bring to a boil.
  4. Reduce heat to low and simmer uncovered for 10 minutes to allow flavors to meld.
  5. Add broken lasagna noodles to the simmering soup. Stir well to prevent sticking. Cover and simmer for 8-10 minutes until pasta is tender.
  6. Turn off the heat. Stir in ricotta cheese until mostly melted. Stir in half of the parmesan cheese.
  7. Ladle into bowls and top with remaining parmesan and fresh basil if desired. Serve immediately.

Notes

For meal prep, cook pasta separately to prevent mushiness. If the soup is too thick, add more broth or water. For a creamier texture, stir in a tablespoon of butter at the end. Can be frozen without the cheese for best results.
