- 1 packet (2 ¼ tsp or 7g) active dry yeast
- 2 tablespoons granulated sugar
- 3 to 3 ½ cups (360g to 420g) all-purpose flour
- 3 tablespoons unsalted butter, melted
- 1 ½ teaspoons salt
- 1 large egg, beaten
- 1 egg beaten with 1 tablespoon water (for egg wash)
- Sesame seeds, poppy seeds, or everything bagel seasoning (optional)
Instructions
- In a large mixing bowl, combine warm milk, sugar, and yeast. Stir gently and let sit for 5-10 minutes until foamy.
- Add melted butter, salt, and beaten egg to the yeast mixture. Stir to combine.
- Gradually add flour, one cup at a time, mixing with a wooden spoon or hand until a shaggy dough forms.
- Turn dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
- Place dough in a lightly oiled bowl, cover with a damp towel or plastic wrap, and let rise in a warm spot for 1-1.5 hours until doubled in size.
- Punch down the dough to release air and divide into 12 equal pieces.
- Roll each piece into an oval shape (about 5 inches long) and place on a prepared baking sheet, 2 inches apart.
- Cover shaped buns and let rise again for 30-45 minutes until puffy.
- Preheat oven to 375°F (190°C). Brush buns with egg wash and sprinkle with seeds if desired.
- Bake for 15-18 minutes until golden brown.
- Remove from oven, brush with a little melted butter for softness, and let cool on a wire rack for at least 15 minutes before slicing.
Notes
Ensure milk is warm but not hot (around 110°F) to avoid killing the yeast. If your kitchen is cold, rise the dough in a turned-off oven with the light on. For best results, use fresh yeast packets. Brushing warm buns with melted butter immediately after baking keeps them soft.
