A bright, salty, and sweet salsa made with frozen edamame and fresh fruit. This no-cook recipe is perfect for boat trips, picnics, and healthy snacking, offering a protein-packed alternative to traditional dips.
Ingredients
- 12 oz (340g) frozen shelled edamame
- 1 large ripe mango, diced
- Juice of 2 fresh limes
- 1/2 medium red onion, finely minced
- 1/2 cup fresh cilantro, chopped
- 1 small jalapeño, seeded and minced
- 1 tsp sea salt
- 1/2 tsp chili powder or Tajín
- 1 ripe avocado, diced (optional)
Instructions
- Thaw frozen edamame by running under warm water for 30 seconds if clumped. Drain well and pat dry with a paper towel to prevent watery salsa.
- Finely mince the red onion and jalapeño. Place them in a medium mixing bowl.
- Peel and dice the mango into small, uniform cubes (about the size of the edamame). Add to the bowl.
- Chop the cilantro and add to the bowl. If using avocado, dice it and fold it in gently.
- Add the dried edamame to the bowl. Squeeze fresh lime juice over everything.
- Sprinkle with sea salt and chili powder (or Tajín). Toss gently to combine all ingredients.
- Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld and the salsa to chill.
- Taste and adjust seasoning with more salt or lime if needed before serving.
