Ingredients
- 3–4 lbs Chuck Roast, trimmed of excess fat
- 6 large Yellow Onions, thinly sliced
- 2 cups Beef Broth, low-sodium preferred
- 1/2 cup Dry Red Wine (e.g., Cabernet or Merlot)
- 2 tablespoons Brown Sugar
- 4 cloves Garlic, minced
- 1 teaspoon Dried Thyme
- 2 Bay Leaves
- 2 tablespoons Flour
- 2 tablespoons Butter
- Salt and Pepper, to taste
Instructions
- Peel and thinly slice all six onions. Place them in a large bowl.
- Pat the chuck roast dry with paper towels. Season all sides generously with salt and pepper. Dust lightly with flour, shaking off any excess.
- Heat butter in a heavy-bottomed skillet over medium-high heat. Sear the roast for 2-3 minutes on each side until browned. Set aside.
- In the same skillet, add the sliced onions. Cook over medium heat for 10-15 minutes, stirring frequently, until soft and golden brown. Add brown sugar halfway through to help caramelize.
- Place the caramelized onions in the bottom of a 6-quart slow cooker.
- Place the seared roast on top of the onions. Pour in the beef broth and red wine. Sprinkle with thyme, add bay leaves, and scatter minced garlic over the top.
- Cover and cook on low for 8-9 hours or on high for 4-5 hours, until the meat shreds easily with a fork.
- Remove the meat and keep it warm. If the sauce is too thin, mix 1 tablespoon of cornstarch with 1 tablespoon of cold water. Stir into the hot liquid in the slow cooker. Set to high and cook for 15 more minutes until thickened.
- Shred the meat or cut into chunks. Spoon the rich onion sauce over the top and serve immediately.
Notes
For best results, caramelize the onions before adding them to the slow cooker to concentrate flavor. If your slow cooker runs hot, reduce the liquid by half a cup. To make it gluten-free, skip the flour dusting and thicken the sauce with cornstarch. Leftovers improve in flavor after sitting overnight.
