  • 2 cups broccoli, cut into florets

  • 1 medium zucchini, sliced into half-moons
  • 1 small yellow onion, diced
  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 lemon, juiced
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Prep ingredients: Rinse and pat shrimp dry. Chop vegetables into uniform sizes and set aside.
  2. Heat a large skillet over medium-high heat. Add butter and let it melt until foaming.
  3. Add garlic and onion to the pan. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Add broccoli and bell peppers to the pan. Stir to coat in garlic butter and cook for 3-4 minutes until slightly softened but still crunchy.
  5. Push veggies to the side or create a well in the center. Add shrimp, seasoning with salt, pepper, and red pepper flakes.
  6. Cook shrimp for 2-3 minutes, flipping once, until pink and opaque. Do not overcook.
  7. Toss shrimp and veggies together. Add zucchini and cook for another 1-2 minutes until tender.
  8. Squeeze lemon juice over the mixture and toss to combine. Taste and adjust seasoning.
  9. Remove from heat immediately and garnish with fresh parsley if desired. Serve hot.
