Description
A juicy, flavorful chicken burger that stretches one chicken breast into two meals. Combining ground chicken with finely chopped romaine lettuce and caesar dressing creates a moist patty that is perfect for grilling or pan-frying.
Ingredients
- 1 large boneless, skinless chicken breast (about 1 lb or 450g)
- 1 cup romaine lettuce, finely chopped
- 1/4 cup parmesan cheese, freshly grated
- 1/4 cup plain or panko breadcrumbs (or gluten-free alternative)
- 1 large egg, room temperature
- 2 tablespoons caesar dressing
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper, freshly cracked
- 1/2 teaspoon salt
- 2 brioche or whole wheat burger buns
- 4 large romaine lettuce leaves, washed and dried
- Extra caesar dressing for drizzling
- Oil or butter for grilling/toasting
Instructions
- Cut the chicken breast into chunks and finely chop the romaine lettuce.
- In a medium mixing bowl, combine the ground chicken, chopped romaine, parmesan cheese, breadcrumbs, egg, caesar dressing, garlic powder, pepper, and salt. Mix gently until just combined; do not overmix.
- Divide the mixture into two equal portions and shape into patties about 3/4 inch thick, slightly wider than the buns. Press a dimple into the center of each patty.
- Heat a grill or cast iron skillet over medium-high heat and lightly oil the surface.
- Cook the patties for 4-5 minutes on the first side until golden brown, then flip and cook for another 3-5 minutes until the internal temperature reaches 165°F (74°C).
- Toast the burger buns on the grill or in the skillet with butter or oil until golden and crisp.
- Assemble the burgers by spreading caesar dressing on the bottom bun, adding romaine leaves, placing the hot chicken patty on top, drizzling with more dressing, and adding the top bun.
- Serve immediately.
Notes
Do not overmix the chicken to avoid a tough texture. If the mixture is too sticky, chill the patties in the fridge for 15 minutes before cooking. For a gluten-free version, use almond flour or gluten-free breadcrumbs and buns. You can also serve these in a lettuce wrap for a low-carb option.
