- 1 lb (450g) frozen raw shrimp (peeled and deveined), thawed
- 1 lb (450g) firm white fish (like Cod or Tilapia), cut into 1-inch cubes
- 1 medium red onion, cut into chunks
- 1 large green bell pepper, cut into squares
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
- Thaw frozen shrimp and white fish in a colander under cold water for 5-10 minutes, then pat dry with paper towels.
- Chop red onion and green bell pepper into pieces roughly the same size as the fish cubes.
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, salt, and pepper until emulsified.
- Soak bamboo skewers in water for 30 minutes if using (metal skewers do not require soaking).
- Thread the skewers alternating between pepper, fish, onion, and shrimp, leaving small spaces between items.
- Brush skewers generously with half of the marinade and let sit for 10-15 minutes.
- Preheat grill to medium-high heat (400°F / 200°C) and lightly oil the grates.
- Grill skewers for 2-3 minutes per side until shrimp are pink and opaque and fish flakes easily.
- Remove from grill, brush with remaining fresh marinade, and serve immediately with lemon wedges.
Notes
Do not overcook the seafood as it will become rubbery. Ensure bamboo skewers are soaked to prevent burning. Pat seafood dry before grilling for a better sear. If using a gas grill, keep the lid closed to maintain heat.
