Description

A creamy, cheesy vegetable casserole with a crunchy breadcrumb topping. This dish combines roasted broccoli, carrots, and onions in a rich cheddar sauce, making it a perfect comfort food for potlucks or weeknight dinners.

  • 2 cups broccoli florets
  • 1 cup carrots, peeled and diced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 3 tablespoons unsalted butter (divided)
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 cup sharp cheddar cheese, grated
  • 1 cup mozzarella cheese, grated
  • 1/2 cup panko breadcrumbs
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • Pinch of nutmeg

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Heat 1 tablespoon of butter in a large skillet over medium heat. Add carrots and onions, sautéing for 5 minutes until softened.
  3. Add broccoli and garlic to the skillet, cooking for another 3-4 minutes until tender-crisp. Remove from heat.
  4. In the same skillet, melt 2 tablespoons of butter over medium-low heat. Whisk in flour and cook for 1 minute to make a roux.
  5. Slowly whisk in milk, continuing to whisk until the sauce thickens and coats the back of a spoon.
  6. Remove from heat and stir in cheddar and mozzarella cheeses until melted. Add Dijon mustard, salt, pepper, and nutmeg.
  7. Combine the sautéed vegetables with the cheese sauce in a large bowl.
  8. Pour the mixture into the prepared baking dish.
  9. Toss panko breadcrumbs with 1 tablespoon of melted butter and sprinkle evenly over the casserole.
  10. Bake for 20-25 minutes until golden brown and bubbling. Let rest for 5 minutes before serving.

Notes

For a gluten-free version, swap all-purpose flour and breadcrumbs for gluten-free alternatives. Grate your own cheese for a smoother sauce. If the top browns too quickly, cover loosely with foil. Can be assembled ahead and refrigerated, adding 10-15 minutes to baking time.
