  • 1/4 tsp Cayenne pepper (optional)
  • 1/2 tsp Mustard powder
  • Salt and black pepper to taste
  • 2 Egg whites
  • Cooking spray or olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and place a wire rack on top.
  2. Pat chicken pieces dry with paper towels. If breasts are thick, pound to ½-inch thickness. Sprinkle with salt and let sit for 10 minutes to dry brine.
  3. In a food processor, combine panko, parmesan, garlic powder, onion powder, parsley, smoked paprika, cayenne, mustard powder, salt, and pepper. Pulse until finely combined and transfer to a shallow bowl.
  4. Whisk egg whites in a second shallow bowl until slightly frothy.
  5. Dip chicken pieces into egg whites, let excess drip off, then press firmly into the breading mixture to ensure coating adheres.
  6. Place coated chicken on the wire rack, ensuring pieces do not touch.
  7. Lightly spray tops with cooking spray or brush with olive oil.
  8. Bake for 15-20 minutes, flipping halfway through, until internal temperature reaches 165°F (74°C).
  9. Let chicken rest for 5 minutes before serving.
