Ingredients
- Boneless, skinless chicken thighs (cut into 1-inch cubes)
- Neutral oil (avocado or vegetable)
- Salt and pepper
- Raw honey
- Fresh lime juice (from about 2 limes)
- Soy sauce (or tamari for gluten-free)
- Fresh garlic (minced)
- Fresh ginger (grated)
- Cornstarch
- Red pepper flakes (optional)
- Jasmine rice
- Green onions (sliced)
- Toasted sesame seeds
Instructions
- Cook the rice according to package instructions, fluff with a fork, and keep warm.
- Pat chicken thighs dry with paper towels and cut into 1-inch cubes. Season generously with salt and pepper.
- In a small bowl, whisk together honey, fresh lime juice, soy sauce, minced garlic, grated ginger, cornstarch, and red pepper flakes until smooth.
- Heat neutral oil in a large skillet or wok over medium-high heat until shimmering.
- Add chicken pieces in a single layer and sear for 3-4 minutes without moving, then flip and cook for another 3-4 minutes until internal temperature reaches 165°F.
- Pour the sauce mixture over the chicken. Stir gently to coat. The sauce will thicken within 1-2 minutes.
- Remove from heat, taste and adjust seasoning if needed, and serve immediately over the rice.
- Garnish with sliced green onions and toasted sesame seeds.
Notes
Ensure chicken is patted dry before cooking to achieve a good sear. Do not overcrowd the pan. Watch the sauce closely as cornstarch thickens quickly and can become gluey if overheated. For a gluten-free version, use tamari or coconut aminos instead of soy sauce.
