Description

A quick and flavorful 15-minute meal featuring seared chicken thighs in a sticky, sweet, and tangy honey lime sauce served over fluffy rice.


Ingredients

  • Boneless, skinless chicken thighs (cut into 1-inch cubes)
  • Neutral oil (avocado or vegetable)
  • Salt and pepper
  • Raw honey
  • Fresh lime juice (from about 2 limes)
  • Soy sauce (or tamari for gluten-free)
  • Fresh garlic (minced)
  • Fresh ginger (grated)
  • Cornstarch
  • Red pepper flakes (optional)
  • Jasmine rice
  • Green onions (sliced)
  • Toasted sesame seeds

Instructions

  1. Cook the rice according to package instructions, fluff with a fork, and keep warm.
  2. Pat chicken thighs dry with paper towels and cut into 1-inch cubes. Season generously with salt and pepper.
  3. In a small bowl, whisk together honey, fresh lime juice, soy sauce, minced garlic, grated ginger, cornstarch, and red pepper flakes until smooth.
  4. Heat neutral oil in a large skillet or wok over medium-high heat until shimmering.
  5. Add chicken pieces in a single layer and sear for 3-4 minutes without moving, then flip and cook for another 3-4 minutes until internal temperature reaches 165°F.
  6. Pour the sauce mixture over the chicken. Stir gently to coat. The sauce will thicken within 1-2 minutes.
  7. Remove from heat, taste and adjust seasoning if needed, and serve immediately over the rice.
  8. Garnish with sliced green onions and toasted sesame seeds.

Notes

Ensure chicken is patted dry before cooking to achieve a good sear. Do not overcrowd the pan. Watch the sauce closely as cornstarch thickens quickly and can become gluey if overheated. For a gluten-free version, use tamari or coconut aminos instead of soy sauce.
