Description

A creamy, hearty weeknight dinner that combines seared beef, mushrooms, and cheese tortellini in a rich stroganoff sauce, all made in one skillet in under 30 minutes.

  • 1 lb beef sirloin or flank steak, sliced into thin strips
  • 2 tbsp olive oil or avocado oil
  • 1 medium yellow onion, diced
  • 8 oz cremini mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth (low-sodium)
  • 1 tsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/4 cup dry white wine (optional)
  • 1 package (9-12 oz) cheddar tortellini (refrigerated)
  • 1/2 cup sour cream (room temperature)
  • 2 tbsp unsalted butter
  • Salt and pepper to taste
  • Dried parsley for garnish

Instructions

  1. Slice beef against the grain into thin strips and season with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat. Sear beef in a single layer for 2-3 minutes until browned, then remove to a plate.
  3. Reduce heat to medium. Add onion and mushrooms to the skillet; cook until translucent and browned (3-4 minutes). Add garlic in the last 30 seconds.
  4. Pour in beef broth and white wine, scraping up browned bits from the pan. Simmer for 1 minute. Stir in Worcestershire sauce and Dijon mustard.
  5. Add tortellini and enough water or broth to just cover the pasta. Bring to a simmer, cover, and cook for 7-9 minutes until pasta is al dente, stirring occasionally.
  6. Turn off the heat. Stir in sour cream and butter until melted and smooth. Adjust consistency with more broth if needed.
  7. Return beef to the pan, toss gently to combine, and garnish with parsley before serving.

Notes

Ensure sour cream is at room temperature to prevent curdling. Always remove the pan from heat before adding dairy. If using frozen tortellini, add extra cooking time and ensure sufficient liquid. For a lighter version, swap beef for chicken or tofu.
