  • 1 medium yellow onion, finely diced
  • 1.5 lbs baby red or Yukon Gold potatoes, sliced thinly (1/8 inch)
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup low-sodium beef broth
  • 2 cloves garlic, minced
  • 2 tbsp ketchup
  • 2 tbsp mustard
  • 2 tbsp pickle relish (optional)
  • 2 tbsp unsalted butter
  • Salt and black pepper to taste
  • Pinch of paprika

Instructions

  1. Wash and thinly slice the baby potatoes. Dice the onion and mince the garlic.
  2. Heat a large skillet over medium-high heat. Add ground beef and diced onion, breaking up the beef with a wooden spoon. Cook for 5-7 minutes until browned and onions are translucent. Drain excess grease if necessary, leaving some for flavor.
  3. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Sprinkle with salt, pepper, and paprika. Stir in ketchup, mustard, and pickle relish. Simmer for 2 minutes to meld flavors.
  5. Layer sliced potatoes over the beef mixture. Pour beef broth over the top, ensuring potatoes are mostly submerged. Cover the skillet with a lid.
  6. Reduce heat to medium-low and simmer for 15-20 minutes, checking occasionally to ensure liquid isn’t evaporating too quickly. Potatoes should be tender when pierced with a fork.
  7. Remove the lid and sprinkle shredded cheddar cheese evenly over the top. Cover again and let sit for 2-3 minutes until cheese is melted and bubbly.
  8. Remove from heat and let rest for 5 minutes before serving to allow the casserole to set. Garnish with fresh parsley if desired.

For best results, slice potatoes uniformly for even cooking. Let the casserole rest for 5 minutes before serving to prevent a soupy texture.
