- 1 large head green cabbage
- 1/2 cup unsalted butter, melted
- 4–5 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper, freshly cracked
- 1 teaspoon dried thyme
- Pinch of red pepper flakes (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
- Remove wilted outer leaves from the cabbage. Slice the head vertically through the core into 1 to 1.5-inch thick steaks, aiming for 4 to 6 steaks. Do not remove the core.
- Gently separate the rings. Arrange the steaks and loose rings on the baking sheet, keeping core steaks in the center.
- In a small bowl, combine melted butter, minced garlic, olive oil, thyme, salt, and pepper. Whisk until combined.
- Generously brush the garlic butter mixture onto the cabbage steaks, ensuring it seeps between the layers of leaves.
- Roast for 20 minutes. Remove from oven and flip the steaks. Brush the top side with more garlic butter.
- Return to oven and roast for another 10 to 15 minutes, until edges are dark golden brown and crispy, and the center is tender.
- Let rest for 5 minutes before serving.
Notes
Do not overcrowd the pan to ensure roasting rather than steaming. Keep the core intact to hold the steak together. For extra richness, add cheese in the last 2-3 minutes of cooking. Avoid microwaving leftovers; reheat in an oven or skillet to maintain crispness.
