Description

Ingredients

  • 6 large eggs
  • 1 lb pork breakfast sausage (mild or maple flavored)
  • 6 large flour tortillas (10-inch diameter)
  • 2 cups shredded sharp cheddar cheese
  • 2 tablespoons whole milk or cream
  • 1 tablespoon unsalted butter
  • Salt and black pepper to taste
  • Pinch of garlic powder or onion powder (optional)
  • Fresh chives for garnish (optional)

Instructions

  1. Heat a non-stick skillet over medium heat and melt the butter. Crumble in the breakfast sausage and cook for 5-7 minutes until browned and cooked through. Drain excess grease and set aside.
  2. In a mixing bowl, whisk the eggs, milk, salt, and pepper vigorously until uniform and slightly frothy.
  3. Wipe the skillet clean and return to medium-low heat. Add a little butter or oil to coat. Pour in the egg mixture and spread evenly to cover the bottom of the pan.
  4. Cook undisturbed for 1-2 minutes until edges start to set.
  5. Sprinkle the shredded cheddar cheese evenly over the eggs, then distribute the cooked sausage crumbles over the cheese.
  6. Place a tortilla on a clean surface. Carefully lift the edge of the egg layer and lay it over the tortilla. Roll the tortilla up tightly to enclose the filling.
  7. Repeat with remaining tortillas and filling. If the pan is small, cook eggs in batches.
  8. Serve immediately, or place seam-side down in the pan for 30 seconds to seal. Garnish with fresh chives if desired.

Notes

Warm tortillas in the microwave for 10 seconds before rolling to make them more pliable. Do not overfill the tortillas to prevent tearing. For meal prep, these freeze well for up to two months. Reheat in an air fryer at 350°F for 3-4 minutes for a crispier texture.
