Description

A budget-friendly, easy-to-make slow cooker meal featuring tender chicken thighs, creamy potatoes, and savory ranch seasoning topped with melted cheddar cheese.


Ingredients

  • 23 lbs boneless, skinless chicken thighs
  • 1 lb small red potatoes, cut into bite-sized pieces
  • 1 packet (1 oz) dry ranch seasoning mix
  • 1 cup low-sodium chicken broth
  • 1/2 cup full-fat sour cream
  • 1 cup shredded sharp cheddar cheese
  • Optional: 1 stalk celery, chopped
  • Optional: 2 green onions, sliced

Instructions

  1. Rinse and pat dry the chicken thighs. Place them in the bottom of a 6-quart slow cooker.
  2. Wash and cut the red potatoes into bite-sized pieces. Place them on top of the chicken.
  3. Sprinkle the entire packet of ranch seasoning over the chicken and potatoes, tossing gently to coat.
  4. Pour the chicken broth over the ingredients. It should come about halfway up the sides.
  5. Cover and cook on low for 6 to 7 hours until chicken is tender and potatoes are cooked through.
  6. Remove the chicken and shred it into bite-sized pieces using two forks. Return to the pot.
  7. Stir in the sour cream, mixing it with the cooking juices to create a creamy base.
  8. Sprinkle the shredded cheddar cheese over the top. Cover and let sit for 10 minutes to melt.
  9. Stir gently until the cheese is melted and everything is coated. Garnish with green onions if desired and serve hot.

Notes

Chicken thighs are recommended over breasts to prevent drying out. Ensure potatoes are cut to uniform sizes for even cooking. If the sauce is too thin, cook uncovered on high for 20-30 minutes. Leftovers can be stored in the fridge for up to 3 days.
