Description
A budget-friendly, 5-ingredient slow cooker recipe using lean pork tenderloin, ranch mix, butter, and pepperoncini peppers for a tender, juicy, and tangy meal perfect for meal prep.
Ingredients
Scale
- 1–1.5 lbs Pork Tenderloin
- 1 packet Ranch Dressing Mix (dry)
- 4 tablespoons Unsalted Butter
- 6–8 Pepperoncini Peppers
- 2–3 tablespoons Pepperoncini Juice
Instructions
- Trim any silvery skin from the pork tenderloins and pat dry.
- Place the pork tenderloins in the slow cooker.
- Sprinkle the entire packet of dry ranch dressing mix evenly over the meat.
- Place chunks or pats of butter on top of the seasoned pork.
- Slice pepperoncini peppers into rings and place them on top of the pork.
- Pour 2-3 tablespoons of pepperoncini juice over everything.
- Cover and cook on LOW for 6-7 hours until the meat is fork-tender.
- Check that the internal temperature reaches 145°F (63°C).
- Remove pork and let rest for 5 minutes before slicing.
- Slice into medallions or shred, and serve with the sauce from the pot.
Notes
Do not skip the resting step to keep juices inside. If your slow cooker runs hot, check at the 5-hour mark. You can add minced garlic for extra flavor. Ensure ranch mix is gluten-free if needed.
