Description
A budget-friendly, comforting Southern Blueberry Cobbler that uses simple pantry staples and frozen berries. This recipe features a cake-like topping and a thick, juicy filling, offering an indulgent dessert experience without the high cost of heavy cream or fresh specialty ingredients.
Ingredients
- 4 cups blueberries (fresh or frozen)
- 3/4 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 1/2 cup melted butter
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 375°F (190°C).
- In a medium bowl, combine blueberries, sugar, cornstarch, and lemon juice. Toss gently to coat and let sit for 10 minutes.
- In a large bowl, whisk together flour, baking powder, and salt.
- In a small bowl, whisk milk, melted butter, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir gently until just combined; do not overmix.
- Pour the berry mixture into a 9×9 inch baking dish.
- Spoon the batter over the top of the berries.
- Bake for 45-50 minutes until the top is golden brown and filling is bubbling.
- Let cool for 10-15 minutes before serving.
Notes
Frozen berries are recommended as they release more juice; do not thaw them first. Ensure butter is melted but not hot to avoid cooking the flour prematurely. Let the berry mixture sit while the oven preheats to help cornstarch activate. If the top browns too quickly, cover loosely with foil. For less sweetness, reduce sugar to 1/2 cup.
