Ingredients

  • 2 medium fresh pineapples (peeled and cut into chunks)
  • 4 medium large oranges (yielding approx. 2 cups fresh-squeezed juice)
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 medium lime (juiced)
  • 2–4 tbsp simple syrup (optional, to taste)
  • Large ice cubes
  • Fresh mint or pineapple wedges (for garnish)

Instructions

  1. Prep the fruit by peeling and chunking the pineapples. Cut oranges in half if juicing by hand.
  2. Juice the oranges until you have about two cups of fresh juice. Strain out large pulp if a smoother texture is preferred.
  3. In a large pitcher or blender, combine the pineapple chunks, orange juice, and coconut milk. Blend on high for 30 seconds until smooth, or whisk vigorously until fully incorporated.
  4. Add the lime juice to the mixture. Start with 1 tablespoon and taste, adding more if needed to balance the sweetness.
  5. Taste the mixture and add simple syrup one tablespoon at a time if additional sweetness is desired.
  6. Chill the mocktail in the refrigerator for at least 10 minutes to allow flavors to meld.
  7. Serve over large ice cubes in tall glasses. Garnish with fresh mint or pineapple wedges.

Notes

Use full-fat coconut milk for the best creamy texture. If the drink separates in the fridge, stir well before serving. For a sparkling version, top each glass with club soda. If making ahead, freeze the juice mixture without the coconut milk and add the coconut milk just before serving to prevent separation.
