- ½ teaspoon salt
- 1 ¼ cups milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
Instructions
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Set aside.
- In a separate large bowl, whisk the milk, egg, melted butter, and vanilla extract until uniform.
- Pour the wet mixture into the dry ingredients. Gently stir until just combined; the batter should be thick and lumpy. Do not overmix.
- Let the batter rest for 5 minutes to allow the flour to hydrate and baking powder to activate.
- Heat a non-stick skillet or griddle over medium heat. Add a small pat of butter or brush of oil.
- Pour ¼ cup of batter onto the pan for each pancake. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
- Flip the pancakes and cook for another 1-2 minutes until golden brown on the second side.
- Remove to a plate and cover with foil to keep warm. Repeat with remaining batter.
Notes
Do not overmix the batter to ensure fluffy pancakes. Let the batter rest for 5 minutes. Keep cooked pancakes warm in a 200°F oven covered with foil. For dairy-free, use plant-based milk and oil. For gluten-free, use a 1:1 gluten-free flour blend.
