Description

A budget-friendly, quick Japanese-inspired rice bowl using canned salmon, mayo, and pantry staples. It mimics the flavor of traditional onigiri without the effort of rolling, offering a creamy, savory meal ready in under 20 minutes.


Ingredients

  • 1 cup white rice (Jasmine or Sushi Rice)
  • 1.5 cups water (for cooking rice)
  • 2 cans (6 oz each) canned salmon, drained
  • 2 tablespoons mayonnaise
  • 1 tablespoon soy sauce
  • 1 teaspoon toasted sesame oil
  • 2 stalks green onions, thinly sliced
  • 1 sheet nori (seaweed), torn into small pieces
  • 1/2 medium cucumber, diced or julienned
  • 1 tablespoon sesame seeds, toasted (optional)

Instructions

  1. Rinse 1 cup of rice under cold water until the water runs clear. Add to a rice cooker or saucepan with 1.5 cups of water.
  2. Cook the rice according to appliance instructions. If using a pot, bring to a boil, reduce heat to low, cover, and simmer for 18 minutes. Remove from heat and let sit covered for 10 minutes, then fluff with a fork.
  3. While rice cooks, drain canned salmon and flake it with a fork. In a mixing bowl, combine flaked salmon with mayonnaise, soy sauce, and sesame oil. Mix until creamy.
  4. Thinly slice green onions and dice cucumber. Tear nori sheets into small pieces.
  5. If using raw sesame seeds, toast them in a dry pan over medium heat for 2-3 minutes until golden and fragrant. Let cool.
  6. Scoop warm rice into serving bowls. Top with the salmon mixture.
  7. Arrange cucumber and green onions on the side. Sprinkle with shredded nori and toasted sesame seeds.
  8. Drizzle with extra soy sauce if desired and serve immediately while warm.

Notes

Rinse rice well to prevent mushiness. Use toasted sesame oil for authentic flavor. If salmon is too dry, add extra mayo or water. Store leftovers in an airtight container for up to 3 days. Keep rice and salmon mixture separate if storing to prevent sogginess.
